Burmese kao soi at DC NoodlesThis noodle soup is having a moment as more Washington restaurants explore the flavors of northern Thailand, where this Burmese-influenced dish is widely served. Locally, find it at the renovated DC Noodles. Its version is kicked up with a base that includes fish paste, shallots and ginger, and is so loaded with turmeric that it’s an eye-searing orange. Crunchy noodles and a lime wedge garnish the bowl. You can top your soup with options ranging from pork to tofu, but stick with tradition and go with chicken.
